wholemeal molten chocolate centred cookie

How did spent my sunday arvo you might ask? Well, pictures above says it all: I was busying making cookies. I saw Molten chocolate centred cookies with candied violets recipe on raspberri cupcakes and thought i'll give it a go. However, I tweaked it alittle due to the fact that I don't have candied violets. I also use wholemeal plain flour for this one. It came out pretty damn good.

Wholemeal Molten Chocolate Centred Cookie
(recipe from raspberri cupcakes)

225g unsalted butter, softened
2 cups caster sugar
3/4 cups baking cocoa powder
2 large eggs
1 tsp vanilla extract
2 cups wholemeal plain flour, sift
1 tsp baking powder, sift
100g dark chocolate
1/2 cup dark chocolate chips

1) Preheat oven at 180 degrees.
2) Cream butter and sugar using electric beater. Add eggs, vanilla extract and cocoa poweder gradually and beat until well combined.
3) Sift flour and baking powder in another bowl and fold in gradually into the mixing bowl. Mix well until the cookie dough is smooth.
4) Using tablespoon or hands (which i did), shape balls of dough about 3 - 4 cm in diameter, flatted slightly on your hand and press small piece of dark choc in the center. Gently press dough around the piece of chocolate to cover it up and then place it onto the line baking tray
5) Sprinkle a couple of chocolate chips over each dough. Allow room by leaving about 5 cm between each ball dough to allow room for spreading when baking.
6) Bake for approx. 10 mins until the cookie is firm around the edge but still soft at the centre. Best serve warm from the oven when the choclate in the centre is melted and gooey.
