Recipe: Chicken & Mango Salad


On Christmas day, I made this yummy summer salad to bring to our friend's place for the Christmas lunch. They were putting on a traditional turkey fest and I offered to bring salad and dessert (Pavlova of course).

Anyway, I think this is the perfect summer salad - Chicken and Mango just can't go wrong! And it's great as well because Mango are in season in Summer so its cheap and so yummy! Nothing like an Aussie Mango I tell ya!

Grilled Chicken & Mango Salad

Chicken:

Chicken breasts fillet
Cajun seasoning
Dry mix herbs
Ground black pepper
Salt

Salad Mix:

1 packet of mix salad leaves
Red onion
1/2 chilli (de-seed and chop up into tiny pieces)
1 Mango (thinly sliced)
Avocado (optional)

Dressing:

Juice of one lemon
1 tablespoon extra virgin olive oil
1 teaspoon mustard
pinch of salt

1. Marinate the chicken breast on both sides with cajun seasoning and mix herbs for about an hour.
2. Grilled the chicken and once cooked, set aside to let it cool. Once cool, slice the chicken up and set aside.
3. Slice up Mango, chilli, red onion and avocado and set them aside for assembly later.
4. Place Salad leaves in a big salad bowl. Toss the chili, onions and mango. Drizzle the dressing all over salad mix and gently toss the mixture together.
5. Place the sliced up chicken on top of the salad. Season with salt and pepper and serve!
