choc chip & oat slice

At my mother's group, we normally take turns to bring afternoon tea for the group every week. On one of our sessions a couple weeks back, one of the mummy, Erica, made this delicious crumbly buttery soft chocolate chip and oat slice for the group. I love it so much that I went and asked her for the recipe.

So I made them over the weekend and oh they are so beautiful! I had to resist eating more than one piece (on a diet!) and it took every grain of morsel in me not to go for seconds. I packed the rest for John to bring to work and share with his staff.

Melted butter, to grease
75g self-raising flour
75g plain flour
90g rolled oats
70g desiccated coconut
140g brown sugar
130g sultanas
95g choc bits
125g butter, melted, cooled
1 egg, lightly whisked

Preheat oven to 180°C. Brush a 17 x 27cm (base measurement) slab pan with melted butter to lightly grease. Line the base and 2 opposite long sides with non-stick baking paper, allowing it to overhang.

Sift the combined flours into a bowl. Add the oats, coconut, sugar, sultanas and choc bits, and stir to combine. Make a well in the centre and add the melted butter and egg. Use a wooden spoon to stir until well combined. Spoon mixture into prepared pan and use the back of a spoon to smooth the surface.

Bake in preheated oven for 20 minutes or until golden brown and firm to the touch. Remove from oven and set aside to cool completely. Cut into squares to serve.

  2. So you should! baking is alot of fun.. that is if you can find time to do it, especially when you have kids!Maybe you can bake with your little girl Vera, making cookies or something, that would be fun :D
