

At last week's mother's group it was my turn to bring afternoon tea so I thought I'll make my awesome banana cake. Over the years I have made alot of banana cake and tried many different recipes. After a couple of trials and errors, I have finally found the perfect one. This recipe makes the cake turns out really delicious and very moist and that's how you want your banana cake to be, not cardboard dry and crumbly which alot of them tend to be.
As always, everyone at mother's group loved it and asked me for recipe so I thought I'll share them on here :)
250g butter
300g sugar
4 eggs
1 tsp vanilla essence
4 Tbsp milk
4-5 bananas, mashed
300g flour, sift with 1 tsp bicarbonate soda & 1 tsp baking powder
Cream butter & sugar. Add eggs, vanilla essence & milk and mix well.
Add mashed banana & mix well. Then add flour & mix.
Pour into loaf pan. Bake at 160C for 1-1.5 hour until a toothpick inserted into the center of the cake comes up clean.
Cool before slicing and serve.
